The idea of using the water tank as a wine cellar was the brainchild of Patrick Sacarello, the third generation of Sacarellos in the coffee business at these premises. He appointed the talented John Langdon, an architect who has been associated with heritage-sensitive development for many years, to design the access into La Cisterna and to place wine rack on the walls.
